COCONUT CREAM PIE | |
1 baked pie shell 1 heaping tbsp. gelatin soaked in 1/4 c. cold water 1 c. milk, scalded 3 beaten egg yolks 2/3 c. sugar 1/2 tsp. salt 3 beaten egg whites 1 tsp. vanilla 1 c. shredded coconut Whipped cream Scald 1 cup milk, pour over 3 beaten egg yolks, 2/3 cup sugar, 1/2 teaspoon salt. Cook over hot water or double boiler until you feel yolks are cooked. Then add gelatin and remove from heat. Cool until it starts to thicken, then fold in beaten egg whites and 1 teaspoon vanilla. Pour in baked pie shell. Cover with shredded coconut. Top with whipped cream just before serving. Do not refrigerate. |
