FRENCH TRUFFLES 
1 (3 oz.) dark chocolate
1/3 c. butter
1 1/4 c. confectioners sugar
3 lg. egg yolks
1 tsp. vanilla

Melt chocolate. Combine butter and sugar. Beat until smooth. Beat in yolks one at a time. Stir in chocolate and vanilla. Chill until stiff. Shape into 1 inch balls. Dip into desired covering.

Coverings: Cocoa, nuts, sprinkles, coconut.
