HERBED OVEN-BROWNED POTATOES 
8 med. red potatoes (2 lbs.)
1 lg. clove garlic
3 tbsp. olive oil
1 1/4 tsp. oregano
1/4 tsp. salt
1/4 tsp. red pepper flakes (optional)

1. Heat oven to 425 degrees. Line jelly roll pan with foil.

2. Scrub and quarter potatoes. Toss in bowl with other ingredients.

3. Bake for 30 minutes, turn and bake 15-20 minutes longer.
