HERBED OVEN BROWNED POTATOES 
8 med. red potatoes
1 lg. clove garlic, minced
3 tbsp. light olive oil
1 1/4 tsp. each oregano & rosemary
1/4 tsp. salt
1/4 tsp. crushed red pepper flakes

Preheat oven to 425 degrees and line a jelly roll pan with foil. Scrub and quarter unpeeled potatoes and place in mixing bowl. Add garlic, oil and seasonings and toss so potatoes are well coated with oil. Arrange in a single layer on pan. Bake uncovered 30 minutes, turn and continue to bake until potatoes are well browned, 15 to 20 minutes longer. Serve immediately.
