HERBED OVEN-BROWNED POTATOES 
2 lb. red potatoes
1 lg. clove garlic, minced
3 tbsp. olive oil
1 1/4 tsp. oregano
1 1/4 tsp. rosemary
1/4 tsp. salt
1/4 tsp. crushed red pepper flakes

About 15 minutes before baking put rack in center of oven and heat to 425 degrees. Scrub and quarter unpeeled potatoes and put in a mixing bowl. Add garlic to bowl along with oil and seasonings and toss so potatoes are well coated with oil. Transfer potatoes to a 13 x 9 pan, arrange them in a single layer. Bake uncovered 30 minutes. Turn over and bake for an additional 20 minutes. Serve immediately.
