TOPSY TURVY CUPCAKES | |
8 oz. cream cheese 1 egg 1/8 tsp. plus 1/2 tsp. salt 1 1/3 c. sugar 6 oz. miniature chocolate chips 1 1/2 c. flour 1 tsp. baking soda 1/4 c. cocoa 1 tsp. vanilla 1/3 c. oil 1 c. water 1 tbsp. vinegar Mix cream cheese, egg, 1/8 teaspoon salt, 1/3 cup sugar and chocolate chips. Set aside. Sift flour, baking soda, 1/2 teaspoon salt, cocoa, 1 cup sugar. Add vanilla, oil, water, and vinegar. Beat well. Fill paper lined muffin pans half full of chocolate mix. Top with a heaping tablespoon of the cream cheese mix. Bake 30-35 minutes at 350 degrees. Makes 16 cupcakes. |
