EASY EGGPLANT PARMESAN 
Saute onion in a little oil. Slice an eggplant; brown on both sides. Toss in one can of tomatoes and let simmer until tender. While simmering, add salt, pepper, basil, and oregano to taste. Serve with sprinkles Parmesan cheese if desired.
