BUTTERSCOTCH PUDDING 
4 oz. creme diet soda
1 env. unflavored gelatin
1/2 tsp. butter pecan extract
1/2 tsp. vanilla extract
4 tsp. brown sugar substitute
2 med. apples, peeled and cored
8 oz. buttermilk

In a saucepan heat soda over medium heat until it boils. Place in blender soda, gelatin, extracts, artificial sweetener and 1 apple, sliced. Blend. Set aside to cool.

Grate other apple. Add to cooled pudding mixture. Add buttermilk and stir. Pour into individual dessert dishes and refrigerate.
