“VELVEETA CHEESE BAKED MACARONI” IS IN:

VELVEETA CHEESE BAKED MACARONI 
1 (8 oz.) pkg. elbow macaroni
1/2 tsp. salt
2 1/2 tbsp. melted butter, divided
1 3/4 cups milk
1/3 cup bread crumbs
8 oz. Velveeta, cubed
2 tbsp. all-purpose flour
1/8 tsp. pepper

Cook macaroni as directed on package and drain.

Melt 1 1/2 tablespoons butter in a heavy saucepan. Blend in flour, stir in milk slowly, and cook, stirring constantly, until mixture thickens. Add seasonings and cheese, stirring until cheese is melted. Add macaroni and transfer to a buttered 1-quart casserole dish or individual casseroles.

Combine bread crumbs and remaining 1 tablespoon melted butter. Sprinkle over macaroni.

Bake at 400°F for 20 minutes.

I made this a couple weeks ago then I decided it needed to be kicked up a couple of notches. I used 2.5 c half milk & half heavy whipping cream to use it up, I did about 3/4 lb of velveeta, had a couple chunks of pepper jack & sharp cheddar, just to get clean out the fridge. THEN I sauteed a finely minced shallot, a finely minced Cubanel (mild chili) pepper in 3 tb butter, but the piece de resistance was a finely minced chipotle pepper. Then I used about a half cup of panko & mixed it with the melted butter, baked 20 min at 400. OMG!! If you're looking for something different this is definitely it. My family RAVED about it for days. A definite twist on a delicious classic. Bon Appetit!!

I also added more velveeta and less milk and flour and cut out the salt. I added cubed ham and a mix of panko and italian breadcrumbs with butter for the top. It came out great!

This is a great recipe! just add some frozen peas & carrots and maybe some ham chunks or chicken and this is a great meal! Easy make ahead dinner too.

Very versatile recipe!! I added tiny ham cubed and baked it in muffin tins topped with the bread crumbs!! Soooo good and the little muffins were fun to eat! But I agree with the one who said no more salt... cut it out and the taste is perfect!

This is very similar to what my mom made growing up, I modified it a little bit to be more like moms :) used 3 cups of Mac and 18 oz velveeta for my boys eat alot ! I left out the flour but added a tsp of mustard ;) moms secret I also added 1 1/2 cups cubed chicken breast and 1 1/2 cups broccoli n carrots (I cut them up very tiny cuz my toddler isn't a fan of veggies but loves cheese :) also instead of bread crumbs I seasoned cubes of cut up toast and I add them 1/2 way through cooking, this is comfort food at it's best!

Instead of "added salt" and basic bread crumbs or panko bread crumbs, try crushed plain "Lays Potato Chips" sprinkled on top; gives it a salty crunchy texture to the gooey cheese and soft pasta! Yum Yum! Thanks for the quick recipe & other alternatives!

My children grew up on this - we all loved it. The recipe I started with almost 40 years ago - did have some diced onion added to the macaroni before the sauce and cheese were added. Of course - the onion added a lot of flavor - which everyone loved.
