TEXAS SKILLET 
1 lb. lean ground beef
3/4 c. chopped onion
1 1/2 tsp. chili powder
1/2 tsp. salt
1/2 tsp. garlic salt
1 (16 oz.) can tomatoes, cut up
1 (15 oz.) can red kidney beans, undrained
3/4 c. uncooked pkg. pre-cooked rice
3/4 c. water
3 tbsp. chopped green pepper
3/4 c. shredded sharp process American cheese (3 oz.)
Corn chips, crushed

Brown ground beef and onion in electric skillet at 350 degrees. Stir in chili powder, salt, garlic salt, tomatoes, beans, rice, water and green peppers. Cover and reduce heat to 220 degrees. Simmer, stirring occasionally for 20 minutes.

Top with cheese, cover and heat until cheese melts, about three minutes. Sprinkle crushed corn chips around the edge. Serves 6.
