ZUCCHINI CASSEROLE 
3 zucchini, sliced thin, not peeled
1 c. Bisquick (or pancake mix)
1/2 c. finely chopped onion
1 (4 oz.) can mushrooms, drained
1/2 c. Parmesan cheese
2 tbsp. parsley
1/2 tsp. salt & pepper
1 clove garlic, chopped fine
1/2 c. vegetable oil
4 eggs, slightly beaten
1/2 tsp. seasoned salt
1/2 tsp. oregano

Combine all ingredients and spread in greased pan. Bake at 350 degrees for 30 to 45 minutes or until golden brown. May add browned and drained ground beef for main dish.
