SHRIMP RICE SALAD 
2 c. cooked lg. shrimp, peeled
1 1/2 c. cooked rice
1/2 c. diced green pepper
1/3 c. diced celery
1/4 c. finely chopped red onion
1/2 c. sliced olives
1 tsp. snipped parsley

DRESSING:

2 tbsp. red wine vinegar
1/4 c. olive oil
1 clove garlic, minced
1/4 tsp. dry mustard
1/8 tsp. paprika
1 tbsp. chopped fresh basil

Combine all dressing ingredients. Then whisk in oil. Can use more shrimp. Put shrimp and dressing on rice.
