SNOWBANKS 
4 egg whites
1 c. granulated sugar
1/8 tsp. salt
1 tsp. almond extract
1 tsp. vanilla
1/2 c. flour
1 (7 oz.) pkg. flaked or shredded coconut
2/3 c. finely chopped mixed candied fruit or miniature semi-sweet chocolate bits

Heat oven to 325 degrees. Grease cookie sheets well.

Beat egg whites in a large bowl with electric mixer until they mound softly. Gradually beat in sugar until soft, floppy peaks form when beaters are lifted. Add salt, extracts; mix to blend. Stir in flour, then coconut and candied fruit.

Drop rounded teaspoonfuls 1 1/2 inches apart on cookie sheets. Bake 20-24 minutes until lightly browned. Makes 48.
