OVEN FRIED MUSTARD CHICKEN 
1 1/2 tbsp. Dijon mustard
1 tbsp. lemon juice
3 lg. garlic cloves, finely minced
1/2 tsp. dried rosemary
Freshly ground pepper
6 sm. chicken thighs, skinned
3 c. bran flakes cereal
6 tbsp. grated Parmesan cheese

1. Preheat oven to 350 degrees.

2. In a small bowl combine mustard, lemon juice, garlic, rosemary and pepper.

3. Coat chicken in mustard mixture.

4. In a sealable bag combine bran flakes and Parmesan. Seal bag and crush bran flakes.

5. Place chicken in bag a few at a time to coat with crumb mixture.

6. In baking dish coated with non-stick spray, arrange chicken in a single layer, sprinkling remaining crumbs on top.

7. Cover with foil and bake 20 minutes.

8. Remove foil and bake 20 minutes longer. Makes 6 servings - 200 calories per serving.
