OVEN FRIED MUSTARD CHICKEN 
1/3 c. bread crumbs
1/3 c. flour
1/4 tsp. paprika
4 boneless chicken breast halves
1/3 c. Dijon mustard
1 tbsp. butter
Salt & pepper

Heat oven to 425 degrees. Combine bread crumbs, flour and paprika. Combine mustard, 3/4 teaspoon salt, 1/4 teaspoon pepper and 2 tablespoons water. Melt butter. Line baking tray with foil and spray with non-stick spray. Dip chicken in mustard mixture, then coat with bread crumb mixture. Put in pan. Drizzle top with melted butter. Bake 15 minutes. Serves 4.
