OVEN-FRIED MUSTARD CHICKEN 
1/3 c. breadcrumbs
1/3 c. flour
1/4 tsp. paprika
1/3 c. Dijon mustard
Salt and pepper
1 tbsp. butter
4 boneless chicken breast halves (1 1/2 lbs.)

Heat oven to 425 degrees. Combine the breadcrumbs, flour, paprika. Combine the mustard, 3/4 teaspoon salt, 1/4 teaspoon pepper and 2 tablespoons water. Melt the butter. Line a shallow pan with foil and spray with Pam.

Dip the chicken breasts in the mustard mixture, then coat with crumb mixture. Put in prepared pan. Drizzle butter over chicken. Bake until browned and cooked through, 10 to 15 minutes.
