RICE PUDDING
2 eggs
2 qts. milk
2 tsp. heaping cornstarch (dissolved in sm. amt. of water)
1 1/4 to 1 1/2 c. sugar
1 c. River Rice
Raisins
Cinnamon

Wash rice. Put lukewarm water on rice (about an inch high over rice). Cook rice until the water is cooked off and rice is left. Cut dissolved cornstarch in milk and rice. Let it come to a boil and add sugar. Stir for about 45 minutes until it is thick.

When you have mostly rice on spoon when stirring, take off heat (not good if too thick). Beat 2 eggs. Add small amount of rice pudding to eggs and stir until all pudding is added to eggs. Add vanilla and some raisins. Cool. Sprinkle with cinnamon
