SAUSAGE RATATOUILLE 
1/2 lb. Italian sausage
1/4 c. olive oil
1 sm. onion, chopped
1 sm. eggplant, cut into 1/2 inch cubes
1 zucchini, sliced
1 clove garlic, minced
1 lg. tomato, peeled and chopped
1/2 tsp. dried whole oregano
1/4 tsp. pepper
Fresh parsley sprigs

Remove casings from sausage. Cook sausage in a large skillet over medium heat until meat is browned, stirring to crumble. Drain well and set aside. Heat oil in a large skillet, add onion and saute 2 minutes over medium heat, stirring constantly. Add eggplant and saute 3 minutes, stirring constantly. Add zucchini and garlic, reduce heat and simmer 10 minutes. Add tomato, sausage and seasonings, cover and simmer an additional 5 minutes, stirring once. Garnish with parsley.
