RATATOUILLE - STYLE CHILI 
1 lb. ground meat
2 sm. onions, chopped
1 (32 oz.) jar spaghetti sauce
1 (14 oz.) can tomatoes or 4 fresh tomatoes
2 (15 oz.) cans kidney beans
4 c. peeled and cubed eggplant and/or zucchini
1 (4 oz.) jar green chilies, drained
2 to 3 tbsp. chili powder

Brown ground meat with onions. Add remaining ingredients plus 1 cup water. Bring to a boil, reduce heat, cover, and simmer 20 minutes until eggplant and/or zucchini are tender.

Optional: Garnish with Cheddar cheese and/or sour cream.
