SOFT RAISIN COOKIES 
2 c. raisins
1 c. water
4 c. flour, sifted
1 tsp. baking powder
1 tsp. baking soda
1 tsp. vanilla
1 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1 c. shortening
1 3/4 c. sugar
2 eggs, slightly beaten
1/2 c. nuts, chopped

Bring raisins and water to a boil. Boil until raisins are plump, about 3 minutes; cool. Cream shortening and sugar until light and fluffy. Add eggs and vanilla. Gradually add the dry ingredients and raisins with any remaining water. Stir in nuts. Drop by tablespoons about 1 inch apart onto greased cookie sheet. Bake at 350 degrees for 12 to 15 minutes. Sprinkle with sugar while hot. Makes about 3 1/2 dozen.
