CHICKEN OR TURKEY CASSEROLE 
2 1/2 c. boned chicken or leftover turkey
1 can cream of mushroom soup
1/2 c. celery, cut fine
1/4 c. chopped onion
1 can Chinese vegetables
3 hard-boiled eggs, cut up
3 c. coarsely crushed potato chips
1/2 c. mayonnaise

Precook celery and onion. Mix all ingredients together. Reserve 2 cups of the potato chips. Bake in covered casserole for 45 minutes at 350 degrees. Remove cover last 10 minutes. Cover with 2 cups of potato chips.
