REFRIGERATOR ROLL DOUGH | |
1 pkg. dry yeast 1 1/2 c. warm water 1 c. unseasoned lukewarm mashed potatoes 2/3 c. sugar 2/3 c. shortening 2 eggs 1 1/2 tsp. salt 6-7 c. flour Dissolve yeast in water in a large bowl. Stir the rest of the ingredients using only 3 cups of flour. Beat until smooth. Mix in enough remaining flour to make the dough easy to handle. Knead on a floured surface, about 5 minutes. Place in a greased bowl and turn upside down. Cover bowl. Refrigerate at least 8 hours. No longer than 5 days. Punch down dough. Shape into your favorite type roll. Let rise 1 hour. Bake at 400 degrees until golden brown about 15 minutes. |
