OVERNIGHT REFRIGERATOR ROLLS 
2 pkg. yeast
2 1/2 c. warm water
3/4 c. sugar
2 eggs
3/4 c. shortening
2 1/2 tsp. salt
8 to 8 1/2 c. flour

Dissolve yeast in water. Add sugar, eggs (beaten), shortening, salt, and 4 cups flour; beat until smooth, about 1 minute. Stir remaining flour or enough to make soft dough. Cover tightly and refrigerate overnight or until needed. One third dough makes 12 rolls. You can use dough for making doughnuts, coffee rings, etc. Cook at about 350 degrees.
