MANGO BREAD 
2 c. unsifted flour
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
3 well beaten eggs
1 1/2 c. sugar (lessen 1/4 cup)
1/2 c. chopped nuts
1/2 c. raisins
1/2 c. shredded coconut (I don't)
3/4 c. Wesson oil
2 c. diced mangos (about 1/4 inch cubes)

Sift together flour, baking soda, cinnamon and salt. Make a well in center. In well add eggs, sugar, chopped nuts, raisins, coconut, oil and mangos. Mix well and bake in ungreased loaf pans at 350 degrees for 1 hour. Makes 2 loaf pans or 4 mini loaf pans. May use only raisins or only coconuts.
