MANGO NUT BREAD 
2 c. flour
1 1/4 c. sugar
2 tsp. cinnamon
2 tsp. baking soda
1/2 tsp. salt
2/3 c. cooking oil
2 c. mango, diced
2 tsp. vanilla
3 eggs
1/2 to 1 c. chopped nuts or 1/2 c. coconut

Sift dry ingredients and make a well. Add rest of ingredients and mix well. Let stand for 20 minutes. Divide into 2 greased loaf pans. Bake at 350 degrees for 1 hour. If desired, line bottoms of pans with waxed paper for easy removal.
