PINEAPPLE WALNUT CAKE 
CAKE:

2 eggs
20 oz. crushed pineapple
2 c. flour
1 c. sugar
1 c. brown sugar
2 tsp. baking soda
1 c. chopped walnuts

FROSTING:

3 oz. cream cheese, softened
1/4 c. butter
1 tsp. vanilla
2 c. powdered sugar
1/2 tsp. ground ginger

In large mixing bowl, beat eggs until light and fluffy. Add crushed pineapple (undrained), flour, sugars and baking soda. Mix well by hand (not electric mixer). Stir in walnuts. Spread evenly in ungreased 13"x9"x2" baking pan. Bake in 350 degree oven for 45 to 50 minutes or until toothpick comes out clean from center. Cool then cover with cream cheese ginger frosting while in the pan. Top with walnuts.

FROSTING: Mix with electric mixer the cream cheese, butter and vanilla. Gradually add powdered sugar and ginger. Continue beating until smooth.
