BEEF WITH BROCCOLI 
2/3 lb. beef flank
1/2 lb. broccoli tops
1 tsp. cornstarch
1/3 c. water
7 tbsp. peanut oil
1 clove crushed garlic
1/2 lg. onion
1/2 tsp. soy sauce
3 tbsp. chicken broth

MARINADE:

1 tsp. dry sherry
1/2 tsp. baking soda
1 tbsp. soy sauce
1 tsp. cornstarch
2 tbsp. oyster sauce

Slice beef across grain into thin strips. Mix marinade in bowl. Add beef strips; mix well. Let stand 20 minutes.

Cut up broccoli tops. Dissolve cornstarch in water to make paste; set aside.

Heat 6 tbsp. oil in heavy frying pan or wok. Stir fry beef until lightly browned. Remove beef with slotted spoon. Set aside.
