VEGETABLE RICE PILAF 
2 tbsp. corn oil
1 lg. onion, chopped
2 lg. garlic cloves, minced
16 oz. mixed vegetables
1/4 tsp. thyme
1/8 tsp. pepper
3 c. cooked brown rice

Heat oil over medium heat. Add onions and garlic; cook 3-4 minutes. Add vegetables, thyme and pepper; cook 2 minutes. Stir in rice and heat through. Serve with Thai chicken.
