HEART HEALTHY SCALLOPS WITH
TORTELLINI
 
3/4 lb. bay scallops
Garlic to taste
2 tbsp. butter
1/2 c. chopped scallions
1 pkg. cheese tortellini (prepared)

Optional: Thinly sliced red pepper, fresh mushrooms, etc.

Put water for tortellini on to boil. Wash, drain and pat dry scallops. In heavy frying pan saute scallops in butter, garlic, and scallions. Cook for 5 to 7 minutes. Cook tortellini according to directions on package. Put tortellini and scallops in warmed serving dish and serve. Serves 2.
