This was one good mother's day salad. I made it along with guacamole and homemade potato chips, being limited on food supplies because we haven't gone in a while, and this was a super simple, delicious salad. I did it without the cheese and mustard, seeing as how I had Parmesan and my mother hates mustards, and it turned out great! We will be having a Russian dish Pilov, made with lamb, carrots, onions, rice, and jalepenos (we are Russian :) Maybe add that to your recipes, it's quite delicious, but we had to go shopping for ingredients.
