CORN FRITTERS 
3 c. whole kernel corn (5 to 6 ears, if using fresh)
1 1/2 c. sifted all purpose flour
2 tsp. baking powder
1 tsp. salt
Pinch cayenne pepper
2 eggs, beaten
1/2 c. milk
Salad oil for deep frying
Maple syrup or confectioners' sugar

Measure 3 cups of whole kernel corn in medium bowl. Combine flour, baking powder, salt and pepper, if desired. Add eggs and milk with corn. Add to dry ingredients and stir just until flour is moistened. In electric deep fat fryer, heat one inch of salad oil to 375 degrees (or, in large saucepan, heat salad oil to 375 degrees on deep fat thermometer.)

Drop batter by tablespoons into hot oil. Fry a few at a time, until golden brown, about 3 minutes. Remove fritters with slotted spoon and drain on paper towels. Serve with maple syrup or confectioners' sugar. Makes about 36 fritters.
