RED BEANS AND RICE 
1 lb. red beans, sorted and washed
3/4 lb. sausage
1 medium onion, chopped
1/3 bell pepper, chopped
Salt and pepper to taste
Cooked rice

Soak beans overnight in water to cover. In same soaking water, bring beans to a boil; lower heat and simmer for 1 1/2 to 2 hours. Add sliced sausage, onion, bell pepper, and salt and pepper; simmer another 1 1/2 or until beans and sausage are tender. Serve over cooked rice.
