FRIED RICE 
1 c. diced meat (cooked ham, sausage, shrimp or chicken)
3 c. cooked rice
2 tbsp. soy sauce
2 eggs, beaten
5 tbsp. oil
1 c. frozen peas and carrots

1. Saute the diced meat in 1 tablespoon oil for 5 minutes.

2. Cook 1 cup frozen vegetables in boiling water for 3 minutes.

3. Cook beaten eggs in a tablespoon hot oil.

4. Heat 2 tablespoons oil in skillet. Add 3 cups of rice and stir often.

Add steps 1, 2, 3, soy sauce and stir well. Serve hot.
