HANGTOWN FRY 
12-18 med. sized oysters, drained
Salt & pepper
Fine soda cracker crumbs
1 egg, beaten
2-4 tbsp. butter
6 eggs
1/4 c. milk
French fried potatoes
Fried ham, crisp bacon or browned link sausage

Season oysters with salt and pepper. Dip them in cracker crumbs, then in the beaten egg and again in cracker crumbs. Fry to a golden brown on one side in 2 tablespoons of the butter in a large frying pan.

While oysters are browning, beat the 6 eggs with the milk and season with salt and pepper. Turn the browned oysters over, add more butter if necessary and pour in egg mixture. Cook slowly until eggs are set and lightly browned.
