CHOCOLATE - CREAM CHEESE
CUPCAKES
 
8 oz. cream cheese
2 c. sugar
1 egg
1 1/4 tsp. salt
6 oz. chocolate chips
2 1/4 c. flour
1/3 c. cocoa
1 1/2 tsp. baking soda
1 1/2 c. water
1/3 c. plus 3 tbsp. (1/2 c. plus) Wesson oil
1 1/2 tbsp. vinegar
1 1/2 tsp. vanilla

Combine cream cheese, 1/2 cup sugars, egg and 1/2 teaspoons salt. Beat until fluffy. Add chocolate chips and set aside.

In another bowl, combine flour, 1 1/2 cups sugar, cocoa, soda, 3/4 teaspoons salt, water, oil, vinegar and vanilla. Beat well. Fill cupcake papers 1/2 full of chocolate batter. Drop in and swirl a heaping spoonful of cream cheese batter. Bake at 350 degrees for 25 minutes. Makes 2 dozen.
