QUICK 'N EASY CASSEROLE 
1 lb. ground beef, lean
1 pkg. (1 lb. 8 oz.) frozen hash brown potatoes, thawed
1 can condensed cream of mushroom soup
1 c. sour cream
1 1/2 c. cheese, shredded or cubed
1 sm. onion, chopped
1 can french fried onions

Preheat oven to 350 degrees. Brown beef, breaking into small pieces. In large bowl combine beef and other ingredients. Mix well. Spread into a 13 x 9 inch baking dish. Bake 35 minutes. Top with the french fried onions and bake an additional 10 minutes.

Easy and sooooo good...I browned the mean and added the onions and let them cook then added a little cream cheese I had that needed to be used. Other than that followed the recipe and baking instructions. Served it with a tossed salad and pickled beets. This would be a great meal to put together on the weekend, then pop it in the oven after work on Manic Monday evening. Dinner in less than an hour and not work.
