CHICKEN VEGETABLE CASSEROLE
(MODIFICATION OF QUICK COBBLER)
 
3 tbsp. butter
1/2 c. milk
2/3 c. flour
1 tbsp. sugar
2 tsp. baking powder
1 1/2 c. mixed frozen vegetables
3 skinless boneless breast of chicken, cubed (can use equal amounts of dark meat if you wish)
Salt and pepper to taste

Melt butter in 1 1/2 quart casserole dish. Mix together milk, flour, sugar and baking powder. Pour over butter. Mix frozen vegetables, salt, pepper and chicken together. Pour over top of flour mixture. Do not cover dish while baking. Bake in oven uncovered at 350 degrees for 35 to 45 minutes depending on oven. Check for doneness. Serves 4.
