QUICK RING BOLOGNA CASSEROLE 
1 1/2 lbs. ring bologna
1 (18 oz.) pkg. mixed vegetables
2 apples, peeled & cut into wedges
1 tbsp. butter
Pepper to taste
1 c. tomato juice
2 tbsp. ketchup
1 tsp. dried thyme leaves
1/3 tsp. dried oregano leaves

Slice bologna in half and saute in butter until browned. Add vegetables and apples, sprinkle with pepper. Add tomato juice, ketchup, bring to boil. Add thyme and oregano, cover and simmer over low heat for about 15 minutes or until vegetables are tender and crisp. Add a little more liquid if necessary.

It sounded a little strange when I first saw the recipe but I had all the ingredients, so I thought I'd give it a try. I used spicy hot V8 instead of regular tomato juice, and it turned out pretty good. It wasn't a dish I'll remember down the road most likely, but it wasn't one I would write off making again.
