BROCCOLI QUICHE WITH POTATO
CRUST
 
CRUST:

4 c. grated potatoes (if nice skins, don't peel)
1 sm. onion, grated
1 egg
1/4 c. flour
Salt and pepper to taste

Mix well, pat in bottom and up sides of 10-inch buttered pie plate. Brush with oil and bake at 400 degrees for 20 minutes.

FILLING:

3/4 c. chopped onion
1 1/2 c. diced ham

Put in crust. Arrange broccoli flowerets on top. Sprinkle with 1 1/2 cup shredded Cheddar cheese. Mix:

3 eggs, lightly beaten
1 c. light cream
Pinch of nutmeg
Salt and pepper

Pour over vegetables and sprinkle top with paprika. Bake at 350 degrees for 50 to 60 minutes until set. Reheats nicely in microwave.

Since microwave ovens vary in power, you may need to adjust your cooking time.
