MEXICAN QUICHE WITHOUT CRUST 
2 c. chopped ham
16 oz. sm. curd cottage cheese
1 pkg. frozen chopped spinach, thawed and drained
6 eggs, beaten
1/2 c. melted butter
6 tbsp. flour
12 oz. Cheddar cheese, grated
8 oz. mushrooms, sliced
1/2 onion, chopped
6 to 8 oz. chopped green chiles

Mix ingredients and transfer to a 9x13 inch casserole or quiche pan. Bake at 350 degrees for 1 hour. Let stand 10 minutes before cutting. Serves 8 to 12 people.
