RIPE CUCUMBER PICKLES 
1 qt. ripe cucumbers
Salt
3/4 c. sugar
2 green peppers, chopped
2 onions, chopped
1 tbsp. horseradish

Slice or cut up cucumbers; sprinkle with salt and let stand a few hours. Drain and wash off salt. Add remaining ingredients. Cover all with vinegar. Bring to a boil and cook until cucumbers are transparent. Seal in sterilized bottles. Makes 4-5 jars.
