SQUASH FRITTERS 
1 c. self-rising corn meal
1 egg, beaten
2/3 c. milk
1 c. squash, cooked and mashed
1 onion, chopped
Salt and pepper to taste
Vegetable oil for frying

Combine all ingredients; blend well. Spoon 1 tablespoon batter into hot oil. Fry until golden brown on both sides. Drain on paper towel and serve immediately.
