TOMATO FRITTERS 
1 c. all purpose flour
1 tsp. baking powder
1 tsp. sugar
3/4 tsp. salt
1/4 tsp. dried basil
1 (28 oz.) can drained tomatoes
1 tbsp. finely minced onion
1 tbsp. finely minced parsley
1 egg
1/2 tsp. Worcestershire sauce
Vegetable oil

In a large bowl combine flour, baking powder, sugar, salt, and basil. Cut tomatoes into 1/2 inch pieces. Place on paper towel to drain further. Add tomatoes, onion, parsley, and Worcestershire sauce to the flour mixture. Do not mix! Add beaten egg to flour and tomato mixture. Blend lightly with a fork. In an electric skillet heated to 360 degrees add 1/4 inch of oil. Drop the batter by tablespoons, patting them down a bit into the hot oil. Fry until golden brown. Keep fritters warm in oven until serving time.
