CORN FRITTERS 
Salad oil for frying
3 eggs, separated
1 3/4 c. whole kernel corn
1/4 c. all-purpose flour
1/4 c. salad oil
1 tsp. salt
3/4 tsp. pepper sauce (optional)

Fresh, frozen or canned may be used. Fresh or frozen must be cooked first.

Heat enough oil in saucepan for deep frying to 375 degrees. Beat egg yolks until light; mix in corn, flour, oil, salt, and pepper sauce. Beat egg whites until stiff but not dry. fold into corn mixture. Drop by tablespoonful into hot oil. Cook fritters until brown on both sides.
