EASY CORN FRITTERS 
1 (#2) can cream style corn
2 tbsp. sugar
2 c. flour
2 eggs
1 1/4 tsp. salt
4 tsp. baking powder
Shortening for frying

Heat shortening to 360 degrees. Beat together corn, eggs, and sugar. Sift together the flour and baking powder. Stir into the corn mixture, mixing enough to moisten flour. Drop by tablespoonful into the hot shortening. (Keep temperature between 350-360 degrees.) Fry about 6 minutes, turning once. Drain on paper towels.

If desired, put powdered sugar in a brown paper bag; shake fritters to coat with powdered sugar.
