NEW JERSEY BLUEBERRY OR
CRANBERRY MUFFINS
 
2 c. sifted flour (unbleached)
1/2 c. sugar
2 1/2 tsp. baking powder
3/4 tsp. salt
1 well beaten egg
1 c. milk
1/3 c. salad oil
1 c. fresh or thawed and well drained blueberries or cranberries

Sift together dry ingredients in bowl. Make a well in the center. Combine egg, milk and oil. Add all at once to dry ingredients. Stir quickly, just until dry ingredients are blended. Gently stir in blueberries or cranberries. Fill greased muffin pan 2/3 full. Bake at 400 degrees for about 25 minutes. Makes 12 muffins.
