ZUCCHINI & MEAT CASSEROLE 
4 med. zucchini
1 or 2 green peppers, diced
1 sm. onion
2 sm. tomatoes, diced
1 lb. ground beef
8 oz. sour cream or yogurt
1 or 2 c. shredded cheddar cheese

Slice and cook zucchini for approximately 8 minutes on High in microwave (with 1/2 cup water; wrapped in Saran Wrap). Drain.

Cook ground beef until almost done. Add green peppers and onions. Cook until onions are transparent (4 minutes or more) Add tomatoes and cook few more minutes.

Mix sour cream with zucchini, put in casserole; top with ground beef mixture. Top with cheese and bake in microwave until hot through and cheese is thoroughly melted.

Since microwave ovens vary in power, you may need to adjust your cooking time.
