25-30 gold ball size new red potatoes, skin on 1 med. onion, chopped 3/4 c. anasazi beans, cooked 3 tbsp. chopped parsley tops 3/4 c. finely diced green pepper 3/4 c. shoepeg corn Parboil potatoes and quarter. Arrange potatoes in shallow pan, roast at 300 degrees for 30 minutes. Saute onions in butter until caramelized. Meanwhile, prepare beans according to package directions. Toss all ingredients together, return to oven for 8-10 minutes. Add seasoned salt to taste. Serves 6. |
