GREEN PEA SALAD 
16 oz. bag frozen peas
1/4 c. shredded cheddar cheese
2 or 3 tbsp. chopped celery
1 or 2 tbsp. chopped red onion
1/2 c. chopped fresh tomato
2 or 3 tbsp. mayonnaise

Place peas in a colander bowl and rinse under warm water until thawed. In a separate bowl, mix together the rest of the ingredients. You can adjust the amounts of the ingredients to your own taste. Now, gently fold the peas into the mayonnaise mixture. Cover the bowl and set it in the refrigerator to chill so the flavors can mingle. Recipe serves 5 to 6.
