SCRAMBLED TOFU 
1 block tofu, drained well, diced fine
1/4 c. chopped red onion
1/4 c. chopped green onion
1/4 c. diced celery
1/2 c. chopped mushrooms
1/4 tsp. fine herbs
1 tbsp. McKay's chicken seasoning
Oil for sauteing

Saute onion, celery and mushrooms. Drain off liquid. Add tofu and mix well breaking up chunks to resemble scrambled eggs. Add fine herbs and chicken seasoning. Serve immediately.
